About the Course
The Level 2 Award in Food Safety in Catering delivered in the outdoors is designed to meet the food safety needs of those working in catering and hospitality, with a particular focus on cooking in the open air.
The course blends theory with practical experience, allowing participants to enjoy cooking lunch outdoors while developing good food safety practices.

- Importance of Food Safety in the Outdoors & HACCP Implementation
- Microbial Hazards – Where are they lurking?
- Foodborne Illnesses & Outdoor Cooking Risks
- Hygiene Control: Temperature, Storage, Handling, Preparation, Cooking & Equipment
- Personal Hygiene Best Practices
- Developing a HACCP Plan Relevant to Your Practice
If you have responsibility for ensuring food safety for children, young people, or adults, this qualification will provide valuable knowledge and practical skills. The training covers good hygiene practices, emphasising the 4 Cs: Chilling, Cooking, Cleaning and Contamination. Participants will also learn about monitoring, controls corrective actions and reporting methods as part of a food safety management system.

Trainer Information
This course is delivered by Sarah Blake from Blake Training, an experienced trainer who originally developed this course with Lantra Awards and now provides training under the nationally recognised Level 2 qualification. The course concludes with a multiple-choice test and upon successful completion, candidates will receive a certificate from Qualsafe along with a Blake Training certificate covering additional outdoor food safety topics.
Cost: £90.00 (plus booking fee), includes lunch, drinks, equipment. Multiple choice test and certificates.
Location: This training day will be facilitated in our private woodland. Free parking is available near our woodland. There is also access to a toilet.
